How to make bread at home
Baking has always been a tradition in my family for generations. I find it to be such a relaxing peaceful and joyful experience. The smell of the baked goods in the oven is always a real delight. And now during quarantine it is just the perfect time to do it.
After posting pictures on my instagram of my latest bread, I have had so many of you that asked me for the receipe and that seemed eager to taste it, that I decided to give you my recipe so here you go:
How to make a Swiss bread? La tresse.
La Tresse is a typical Swiss bread. It’s a braided bread and the name is derived from its shape and literally means “braid”.
It’s actually quite easy to make so it shouldn’t be a problem for those of you that’s don’t like to get their hands dirty, so Voilà:
Ingredients of bread, my recipe.
-500 gr flour:
I used a mix between 70% white and 30% spelt because that’s what I had in house but you can choose the flour according to your taste and preferences.
-20gr of fresh yeast :
You could also use dry yeast 7gr a little pack if you don’t have fresh but maybe it won’t rise as much.
-60gr of butter:
Let it melt a little.
-Lukewarm milk 3 1/4 dl :
( I used a plant based milk soja since I am lactose intolerant).
-A pinch of salt and a teaspoon of sugar. To add some extra flavor you could also add some vanilla sugar.
-Oven preheated at 180′ Celsius for a convection oven.
-1 egg for the brushing at the end.
-Baking Time: 30-35 min
-Crumble the yeast and cut the butter in cubs. Put these two ingredients in a bowl and add the flour, mix it all together with a wooden spoon. Add the salt and sugar and the lukewarm milk.
-Knead the dough for about 10 min. I did it with my hands. Make sure to stretch it very well and roll it until you see even little air bubbles.
-Cover the dough in a bowl with a towel at room temperature and let it rise for 1h30 until the dough is double the volume.
-Cut the dough in half and make two long rollers of 70cm a little thinner at the ends and then begin braiding the dough. Look on internet if you don’t know how to bread a bread.
-Put the tresse on a baking tray covered with a baking sheet and brush it with the beaten egg and let it raise a bit more 30 min before putting it in the oven. Bake for 30 min and voilà.
Let it cool of a little bit on a grill and it’s ready to be enjoyed!!
Tips : best with Nutella or Lindt chocolate paste which is without the palm oil :))
